No, businesses in GTA Online do not produce goods or accumulate profits if you are offline or away from GTA Online. For your MC businesses, bunkers, nightclubs, and other money makers to operate, you need to remain actively online and playing GTA Online in a public session.

What Activities Allow Businesses to Produce?
While offline or in GTA Story Mode, all your businesses will remain completely dormant.
But, there are many online activities that let them keep ticking over in the background:
- Free Roam
- Contact Missions
- Heists and Setups
- Races
- Adversary Modes
- Arena Wars
Essentially, as long as you‘re actively playing GTA Online on a given character, your businesses will be accumulating valuable product for later sale.
The only exception is time spent on load screens, where production is paused.

Each business has different stock accumulation rates, affected by upgrades, number of players in session, and other minor factors.
